Tuscan Baked Chicken with Spinach, Bacon and White Beans
Cook the bacon in an oven safe skillet. Chop the cooked bacon into small pieces and set aside.
Chop and brown an onion.
Return the bacon to the pan. Add the spinach, canned tomatoes (do not drain) and beans.
Mix and return the chicken to the pan. Add some rosemary from your garden.
Bake for 40 minutes at 350 degrees.
And enjoy.

Ingredients
- 2 Kirkwood chicken breasts
- 4 slices Simply Nature bacon
- 1 chopped onion
- 1/8 teaspoon kosher salt
- 2.5 ounces Simply Nature spinach
- 2 sprigs fresh rosemary (optional)
- 1 16 ounce can Dakota's Great Northern Beans
- 1 10 ounce can diced tomatoes (do not drain)
Directions
- 1. Preheat oven to 350°.
- 2. Cook bacon in an ovenproof skillet until crispy. Chop and set aside.
- 3. Brown chicken pieces. Remove chicken from pan and set aside.
- 4. Cook onion until brown. Stir in bacon, spinach, rosemary, beans, and tomatoes.
- 5. Place chicken on top of mixture.
- 6. Bake uncovered for 40 minutes.

Parmesan Crusted Chicken
You will need chicken breasts, mayo, parmesan cheese and bread crumbs.
Spread the mixture on the chicken. I cut mine into strips.
Sprinkle bread crumbs over the chicken and bake for 20 minutes.
We had ours with the parmesan zucchini from here.
Parmesan Crusted Chicken
Ingredients:
- 1/2 cup Fit and Active Light Mayonnaise
- 1/4 cup Priano Parmesan cheese
- 2 chicken breasts cut into strips
- 4 tsp. Italian seasoned Chef's Cupboard bread crumbs
Directions:
- Preheat oven to 425°.
- Combine mayo with cheese in a bowl. Arrange chicken in an oven safe pan. Spread with mayo and cheese, then sprinkle with bread crumbs.
- Bake until chicken is no longer pink, about 20 minutes.

Jalapeño Bacon Bites
Warning: These little guys are addicting. Crescent rolls stuffed with cream cheese, bacon, jalapeño and cheddar are indulgently perfect and easy.
Have your bacon fully cooked. I like to bake it at 400˚ on cooling racks on top of a baking sheet. Put the bacon in when the oven is cool (do not preheat) and about 20-30 min later(depending on thickness), you have perfectly cooked bacon. Try it! You'll never go back to pan cooking bacon. promise.
Put all your ingredients in a bowl. 1 Package of cream creese, 1/2 cup cheddar cheese, 1-2 jalapeño(s) and about 1/2 cup bacon.
Mix! :)
Roll out the entire sheet of crescent rolls, do not separate. Roll out thin and cut into about 20 or so squares. Use a mini muffin pan and plop one into each little cup. Fill with the filling and then criss cross the corners over each other. Bake for 12-14 minutes at 375˚. Cool and enjoy!
