Honey Soy and Garlic Marinated Chicken


We make this chicken on the grill in the summer, but it is just as good cooked on the stove.  


Just marinate a Kirkwood chicken breast in soy sauce, honey and some fresh garlic.  


Cook in a grill pan or skillet.  





Baker's Corner Bacon and Cheddar Beer Bread



Aldi has a few flavors of this easy beer bread.  This is the bacon and cheddar variety.  

All you need is the mix, a beer and some butter.  


Combine the mix and the can of beer, pour the batter in a pan. 



Add the melted butter and bake.  


It is quick and easy to make.

Pumpkin and Bacon Appetizers


These appetizers are great for fall.  The apple and pumpkin flavors work well together but it is the honey that ties everything together.



First mix the cream cheese, goat cheese and pumpkin in a bowl.


Add the pepper and bacon.





Spread the mixture on a cracker or crostini.    



Sprinkle with bacon, apple and walnuts.  Drizzle with honey.








Pumpkin and Bacon Appetizers

  • 8 oz. Happy Farms cream cheese
  • 4 oz. Goat Cheese
  • 3/4 cup Baker's Corner Pureed Pumpkin
  • 6 slices of bacon cooked and crumbled (Aldi has many choices for bacon!)
  • 1/8 teaspoon black pepper (I used fresh ground)
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped apples (I used honey crisp.)
  • Honey for drizzling
  • Crackers or crostini (I used Clancy's Bagel Chips.)

Instructions
  1. Mix cream cheese, goat cheese and pumpkin in a bowl
  2. Add pepper and 1/2 of the bacon
  3. Spread the mixture onto a cracker or crostini
  4. Sprinkle with nuts, apples, and bacon
  5. Drizzle with honey

Parmesan Zucchini

I love zucchini and tend to make it often as a side dish. I do prepare this on my own very similar to this, so I decided to try out Aldi's version. I love the addition of onion cooked to almost crisp. I used red onion because it is what I had, but I think the sweetness of it really made a different taste.  Overall, this recipe is fantastic and easy.



Directions:
  1. In a large sauté pan, heat the oil over high heat. Sauté the onions until they begin to soften.
  2. Add the garlic, sauté one minute. Add the sliced zucchini. Cook covered, until the zucchini is crisp tender.
  3. Season with salt and pepper. Toss with Parmesan cheese.

Baked Brie Bites with Sugared Cranberries



In a small saucepan, melt butter. Add orange juice, bacon bits, walnuts, apple, cinnamon and 3 tablespoons brown sugar. Cook over medium-high heat, stirring frequently, until sugar has dissolved and apples begin to brown, 3-5 minutes. Remove from heat. Stir in orange zest.
Unroll crescent rolls and pinch together seams to create 1 large sheet with each package of dough. Cut each rectangle into 12 squares.

Cut brie into 24 pieces and place in the center of the dough square. Top with apple walnut mixture and a pinch of brown sugar. Bring edges of the dough square to the center and pinch to create a seal.
Bake for 10 minutes or until golden brown.

Garnish each bite with a sugared cranberry for an unexpected burst of flavor.

Dried Cranberry and Arugula Couscous


I love to make couscous because it is quick and easy. For this recipe follow the directions on the box, but substitute chicken broth for the water.


Add green onions to the liquid while it boils. Then turn off the heat, add the couscous and cover.


Stir in arugula and cranberries while the couscous is warm and drizzle with olive oil.


A quick, simple and cheap meal!

Dried Cranberry and Arugula Couscous

  •  11/4 cup Simply Nature organic chicken broth 
  •  1 box Reggano Roasted Garlic & Olive Oil Couscous mix 
  •  3 green onions 
  •  1 cup packed Simply Nature organic arugula 
  •  1/2 cup Nature's Best dried cranberries 
  • A drizzle of olive oil 
Instructions:

  1. Bring the chicken broth, spice packet and green onions to a boil 
  2. Turn off heat, add couscous 
  3. Let stand 5 minutes 
  4. Stir in arugula and dried cranberries 
  5. Drizzle with olive oil

Christkindl Glühwein Spiced Red Wine

If you have ever been to Chicago in December, you may have stumbled across the Christkindl Market in Daley Plaza. And if you are in Chicago in December, you know that you probably need a warm drink.
One of the staples of the Christkindl Market is the Glühwein, which is a spiced red wine. 
Instead of fighting the crowds and wind burn, stay home and enjoy Aldi's version for just $4.99.

Just Heat and Serve! We garnished ours with cinnamon stick, cutie orange slice and some dried cranberries.

Samoas are one of my favorite cookies and Benton's Caramel Coconut Fudge Cookies are almost the real thing. A buttery cookie encased with coconut and caramel with just the right amount of chocolate drizzle. Where can you go wrong!?....Oh right, the year long wait. 
Well, Benton's cookies from Aldi can hit the spot and especially at the price of $1.79 a box.
